Started in 2017 by Naima and David Didon, Domaine Didon in Chassey-le-Camp in the Cote Chalonnaise. This village is located in the AOC Bouzeron, which we know from Aligote! But in addition to their flawless Aligote's, they also make beautiful Chardonnay and various styles of Pinot noir. Sometimes from their own domain, completely biodynamic and sometimes as negoce, buying grapes from a friendly winemaking family in Alsace.
Their own vineyard Vignes Blanches is only 2 hectares and is full of Chardonnay, Pinot noir, blanc and Aligote on limestone and is known as one of the best terroirs in the village. They only work this vineyard by hand and occasionally by horse, so no heavy machines are used to not put too much strain on the soil. In the cellar they process their wines as minimally as possible, the wines are matured in amphora, fiberglass or oak and all mature sur lie, after which they are bottled with no or as little sulfite as possible.
Great and flawless wines that are only available in very limited editions. A must try.
